After the wort cools to the appropriate temperature, yeast is added to start fermentation. During this process, the yeast converts the maltose dissolved in the wort into carbon dioxide and alcohol. To achieve a high-quality fermentation process, it is necessary to measure the temperature and liquid level of the wort in the fermentation tank, as well as the CO₂ in the recovery pipe and the pressure in the yeast pipe.
